In this 19th century coaching inn, located in the heart of historic Dijon, the Burgundian terroir finds a talented interpreter in it Chief William Frachot . The eggs in meurette are revisited with modernity, while only freshwater fish – perch, pikeperch, pike – appear on the menu, with creations such as brook trout and river fish soup.
